Evans has welcomed a new eatery that has been making its way to Columbia County for almost two years.
Eggs Up Grill opened at Shoppes at Evans Town Center off North Belair Road, Monday morning. The new breakfast-and-lunch spot is the initial franchise location launched by Alvin Knotts, who owns Knotts Funeral Home in Swansea, S.C., and her daughter and business mentee, Clarissa Knotts, a 17-year registered nurse and anesthetist.

“This is an opportunity to build generational wealth for my children, and to be able to own a business that makes me feel proud about what I’m serving and providing,” said Clarissa Knotts, who, amid the relocation from South Carolina, will continue her work in the medical field while Kevin Patrick, her fiancé, runs the restaurant. “Eggs Up Grill offers great food that anyone can afford, in a family-oriented environment, and there is something on the menu for everyone. We look forward to serving our neighbors and invite everyone to come enjoy the best breakfast, brunch and lunch in town.”
Eggs Up’s menu features classic egg-based breakfast selections like steak and eggs, hash and eggs and biscuits and gravy; and lunchtime staples like BLTs, burgers and patty melts. Among its unique selections are the carne asada breakfast burrito, the BBQ chicken melt and “The Grand Classic,” a plate of bacon, eggs, sausage and toast.
The morning and afternoon bistro’s arrival was announced in fall of 2023, to its current 2,380-square foot space, in the fall of 2023. The Knotts’ Evans eatery is the first of four franchises planned for the CSRA.


This is part of an overarching goal, announced last year by CEO Ricky Richardson, to open upwards of 20 new restaurants throughout the Southeast this year.
Eggs Up Grill, which first opened in Pawleys Island, S.C. in 1997 and is currently headquartered in Spartanburg, S.C., has some 96 locations, 13 of which are in Georgia including the Evans site.
