A new restaurant promises to tantalize the taste buds of patrons who love both Asian and Mexican cuisine.

Evans High School graduate Tracy Frey and her husband Ben are bringing Roll On In and Buzzed Bull Creamery to 7025 Evans Town Center Blvd., in mid-to-late summer 2021.

“I don’t have an exact date yet,” she said. “We are still trying to get all of the permits.”

Both under one roof, Roll On In will offer “a menu that explores the edge of multi-cultural boundaries, bringing sushi burritos, sushi tacos, sushi bowls and even sushi donuts to a whole new level,” according to its website. Buzzed Bull Creamery offers liquid nitrogen-made ice cream. The liquid nitrogen is used to freeze the flavored treat, Tracy said.

“It’s really neat because it’s delicious and made right in front of you and it makes a neat smoke effect,” she said. “It’s just cool all the way around and it tastes great.”

The casual restaurant will offer dine-in and take-out service, along with a delivery option. The menu will include dairy free, vegan and vegetarian options.  The Freys intend to support local businesses as much as possible, buying ingredients from local outlets.

“Everything we make, both sides are going to be completely fresh, made to order, all premium ingredients made right in front of you,” Frey said and mentioned that the ice cream, available in many flavors, can be made with or without alcohol.

Tracy said she anticipates hiring 10 to 15 employees.

“I’m going to need a lot of help,” she said. “This is something that I have wanted to do for as long as I can remember. We are just really looking forward to becoming a part of the community.”

Founded in Ohio, Roll On In is expanding nationwide through franchising, according to its website.
