Health inspectors flag unsafe food practices at Kyoto Japanese Cuisine

The health inspection world grades a score below 70 as failing, however, no restaurants, pools or hotels received a failing score from inspections conducted on Sept. 1–5.

Worst scores in this week’s health inspection

This week’s lowest health inspection score was an 83 earned by a Kyoto Japanese Cuisine, located at 202 South Belair Road, in Martinez.

During the inspection, the inspector noticed food being improperly left on kitchen surfaces, which resulted in a three-point deduction.

“Observed cooked chicken cooling by sitting out on counter,” the report stated. “Foods must be cooled actively; either in ice bath/cold wand or in cooler.”

The inspector also reported finding food being improperly thawed, resulting in three points docked from the health score. 

“Observed fish in ROP being thawed in original packaging,” the report stated. “If packaging states to remove items before thawing, food MUST be removed before thawing.”

Another three points were deducted from the health score for the inspector witnessing food being dangerously stored that could cause contamination.

“Observed raw eggs and sausage stored in a manner which could contaminate RTE food,” the report stated. “Arrange food in coolers to better prevent contamination by separation.”

After losing another point for observing containers and dishes in need of a good cleaning, the inspector deducted three more points for seeing employees prep food wearing accessories.

“Observed employees prepping food with watches/bracelets on wrist,” the report stated. “Ensure no wrist wear is worn when prepping food.”

The establishment lost three more points for observing insect activity in the kitchen.

“Observed several live flies in the kitchen,” the report stated. “Keep fly traps supplied and keep doors closed.”

The second lowest score of the week was an 88 given to Maryland Fried Chicken, located at 12 Broad St., in Augusta.

The inspector deducted four points for noticing an employee not properly wash restaurant utensils.

“Observed employee skip the sanitizing step when washing the utensils,” the report stated. “Ensure utensils are properly washed, rinsed, and sanitized.”

During the inspection, the inspector deducted another four points for finding outdated food items.

“Observed baked beans held past discard date on label in walk-in-cooler,” the report stated. “Discard. Monitor use-by dates and discard when appropriate.”

The inspector also witnessed insect activity in the establishment, which resulted in another three point reduction.

“Observed flies and gnats throughout establishment,” the report stated.
