In the Kitchen With Vera: It’s tailgating time

There’s nothing like a backdrop of the Academy of Richmond County to start a series of tailgating episodes for September! My husband and our three sons all finished at ARC and as the old saying goes, “if the walls could talk,” I guess it’s a good thing I didn’t go inside that day!

The episode was a lot of fun, not only for the subject matter but also to combine some of my favorite recipes.  Hopefully you caught the Cookbook on sale last week and this week in preparation for the beginning of college football and Friday night high school games. Now is the perfect time to try some of my favorites!

Swedish Meatballs are a real fan favorite and with a crock pot that can be plugged into your car or just a cooler to keep them in until meal time, this is a welcomed addition to the normal cold or room temperature items. Add to that the Hot Ham Bites and you’ve got two real winners!  Both of these can be made a day in advance so you’re not scrambling on game day.

What goes well with either of those are pasta salad and finger sandwiches.  The Lemon Basil Pasta Salad in the Cookbook may be one of those you haven’t tried yet so now is the perfect time.  The recipe makes enough for a crowd or enough for you to send some to the game and keep the rest refrigerated for the remainder of the weekend. The finger sandwiches highlight our now famous Pimento Cheese – with the secret ingredient being the roasted red peppers. If you love that flavor as much as I do, don’t hesitate to put more than the recipe calls for when you make it. My husband says the more of that you can see, the better he likes it!

And finally, maybe everyone’s favorite is what’s for dessert.  In this case, nothing is more practical and delicious that the Georgia Brandied Peach Pound Cake.  What a great way to end the summer and maybe throw in a few of those last crop peaches that you have on hand.
