In the Kitchen with Vera: Soup, sandwich, salad

For all of you that were customers, fans and patrons of The VeryVera Cafe on Washington Road, it’s hard to believe that those doors shut in August of 2013. People still call our office to ask if we can ship a pound cake or if they can swing by and pick up Chicken Salad or Pimento Cheese. Hopefully the show that airs today will be a great reminder of those days for many of you! And for those of you that miss the show on Saturday nights due to football: SHOW WILL AIR SUNDAY 10/30 at 5:30 on WJBF.

The Roasted Tomato Basil Soup was the Soup of the Day on Thursday. Regulars would get there early to be able to order a quart to-go before we sold out. It is truly a delicious Tomato Soup and the recipe is also in The VeryVera Cookbook.

The Sophisticated Ham Sandwich was a regular favorite listed under Sandwiches on the Cafe Menu. Ciabatta Bread, Praline Sauce, Honey Ham, Swiss Cheese and Granny Smith Apples served warm with a great combination of sweet and savory was truly a taste that made your pinky finger go up!  Sharing this secret is a big deal to me!

And finally, the Tomato Vinaigrette Dressing, was a recipe of my mother-in-law, Sue Stewart. She served this on grapefruit sections on top of iceberg lettuce and it was a show stopper for a dinner party. I loved it so much that I found other uses for it and would keep it made in the refrigerator all of the time. It will probably become one of your favorites, too.
