A new restaurant is burgeoning its way to Augusta’s vegan scene, one catering event and food-delivery at a time.
One29 Plant-Based Eatery has been in operation since February, offering its array of herbivorous fare via scheduled appearances, and unveiling its presence on social media.
“It’s been big, but it’s getting more recognized,” said owner Peter Edward, an Army veteran and chef whose own turn towards a plant-based diet inspired him to launch a business focused on healthier food, which he refers to as a ministry.
The name of the enterprise is derived from Scripture, Genesis 1:29, Edward said: “And God said, Behold, I have given you every herb bearing seed, which is upon the face of all the earth, and every tree, in the which is the fruit of a tree yielding seed; to you it shall be for meat.”

The most popular selections, Edward said, have been its recent Caribbean-inspired cuisine: jerk “chik’n” and jerk steak, made with tofu, beans and rice, alongside plantains, yams and cabbage.

Edward prefers the term “plant-based” to “vegan,” noting that veganism is associated with avoiding animal products in one’s lifestyle—such as by not wearing leather belts or shoes. Edward also prefers to emphasize what the culinary regime allows, rather than what it doesn’t allow.
“There’s a lot of differences, but there’s some things that vegans consume that I wouldn’t,” Edward said, noting as examples beer (as there are “non-vegan” beers, such as milk stouts that are brewed with animal products).
While a brick-and-mortar location is certainly part of the business plan, One29 has mostly developed via pop-up events. Its most recent pop-up was during Masters week: Friday, April 12, at the BaseOps commercial communal kitchen.
Its next scheduled one will be Monday, April 15 from 11 a.m. to 3 p.m., again at BaseOps kitchen at 2430 Peach Orchard Road. For more information, visit its Facebook page.
