New York Butcher Shoppe opens Evans location

A butcher shop that offers a plethora of meat has come to Evans. 

That’s exactly what customers get at The New York Butcher Shoppe in Evans, which opened in early February and is the second location for the store, with the first one being in Surrey Center. Owner Jack Deese said the store is a full butcher shop that offers a variety of premium meats and exotic meats. 

“We can custom cut. We can prepare pretty much any way you can think,” Deese said. “We also offer a huge menu of prepared dishes. Most everything is just ready to put in the oven and heat, everything is cooked, with the exception of things like our stuffed pork chops and stuffed chicken breast. We stuff those, and those are fresh, uncooked and you take those home and cook them. Most everything takes about 20 minutes.”

The store also offers a variety of wines from high end to everyday drinking, Deese said. The store also does smoked meats, including smoked pulled pork, baby back ribs, wings, tri-trip, brisket and butcher’s candy, aka burnt ends. There are future plans for the store to offer hot meals to be picked up a couple of time a week.

Deese said he always had plans to open a second location, but it took longer than he expected. But since opening earlier this month, Deese said the support has been great. 

“We just kind of have a soft opening for four to six weeks to get all the kinks worked out and honestly to find staff,” Deese said. “The volumes that we’re projected to do here, I don’t have the staff to maintain that, and I don’t want to break my, the guys that I have here. I was so lucky to find them.”

While the Evans and Surrey Center stores are very similar, one major difference is that sandwiches are only sold out of the Surrey Center location, Deese said.

The current store hours for the Evans location are Monday through Saturday from 11 a.m. to 6 p.m., but Deese said he would eventually like to the store to be opened on a Sunday. 

“We’re excited to be here, I can’t say enough about how welcoming everyone has already been,” Deese said. “It’s great when our guests share the same excitement that we have about us being here.”
