Upcoming Scandinavian-style fine dining restaurant breaks ground in Evans

A new restaurant concept is coming to Evans, near the Ponder Place Office Park.

Nordhavn Rustik will be a two eateries in one, one side for fine dining, the other side a deli.  Monday afternoon, representatives from the Columbia County Chamber of Commerce joined the restaurant’s team of investors for a groundbreaking ceremony at its the upcoming location at 406 Park Town Blvd.

The fine dining side, or “Nordhavn,” will offer a menu influenced by German, Danish and Norwegian cuisine. The selections will be “70% seafood and 30% meat,” including wild game such as elk or bison, explained Dr. John Bojescul, an investing partner.

“All the other restaurants are in a building, or you’ve got to share it with somebody. So I didn’t want to share,” said Bojescul, who encountered similarly styled restaurants on a trip to northern Europe. “That’s why I wanted a standalone concept.”

The “Rustik” side will be a European-bakery style deli. The restaurant — or restaurants — will share one kitchen, offering dining during the day, lunch on Saturdays and brunch on Sundays.

“It’s supposed to be an experience, but not quite a destination, because I don’t want people to come just once a year,” Bojescul said. “But you know, only reputation will get people to come back.”

Construction of the 6,000 square foot restaurant, designed in Scandinavian style, is scheduled for completion next June, with a projected opening in mid to late summer.
